There is a group of scientific dieticians, and I belong to that group, who believe that the great consumption of flesh protein and egg protein is apt to poison the organs of digestion, the bowel tract, liver, kidneys and the veins and arteries. We cannot as yet decide whether this poisoning takes place directly through the disintegration of these proteins, or indirectly through the poisons produced by micro-organisms of the bowel.

FOOD AND HEALTH. The millers are very clever. They sell fine white flour at a high price, causing constipation, and bran at a still higher price, to cure it. Whole-wheat or whole-rye bread can be produced, of course, much cheaper than white bread. In Denmark, whole-rye bread costs only half as much as white bread.

HINTS FOR WOULD BE VEGETARIANS. The objection to flesh, fish and and fowl is not fanciful. The present age is the age of constipation. Flesh, fish and fowl putrefy in a stagnant bowel and poison the body. Instinct warns us against putrefaction. We are horrified by putrid meat, while mouldy bread and fruit or milk which has turned sour doses not perturb us. In thousands of cases of apparently incurable disease a fleshless diet has restored the sufferer to health.

FOOD AND HEALTH. The whole country was placed on a low-protein diet. Believers in high protein suggested that the resistance against disease would decrease. My expectations were to the contrary. Who won? Well, the result was a great victory for the low-protein diet. The state of health improved as never before.
